I've been mostly cooking Chili, or Goulash so far, but I'm thinking about shaking things up a bit this winter. Would appreciate any recommendations of hearty warming stews you like to make when it's cold. (Bonus points if it's good with rice)

once your stewpilled anything can become a stew.
Perfect example is beef stroganoff, most recipes call for ribeye or some other steak cut. But there's nothing stopping you from stewing beef and onions, optionally with a squeeze of tomato paste and maybe a splash of white wine, and using that as a base to make the sauce.
Also, Adam Fagusea has been making some good videos on stew lately. I want to try 'boneless beef short rib' instead of chuck but it's always sold out at the store.

Kokkinisto is just onion, carlic, carrot, chili pepper, crushed tomatoes and tomato paste with the cheapest shitty beef cut you can find. Fry the beef in butter after flouing them, put them in the stew with carrot, tomatoes and paste when they gain some colour. Fry the onions and carlic in the same pan afterwards then just dump everything in the stew, add water enough to just cover the beef. Simmer 3 hours and of course add bay leaf, salt, pepper, oregano.

Very wholesome balkan cooking, fits with pasta and rice

Chicken stew with buttermilk biscuits is always great. Beef stroganoff, Irish beef stew served over mashed potatoes, creamy pork stew, sky's really the limit OP, you can stew basically anything if you've got a little imagination. Were you looking for specific recipes, or just inspiration? Chef John has a ton of good soup and stew recipes.

I would start with the George Lang recipe as a reference, his Hungarian recipes are usually a good starting point while also acknowledging regional variations. E.g. Szekely gulyas includes sauerkraut.
Lang got my porkolt/paprikas tasting proper. From there I improvise how I see fit, I think that's the spirit of these dishes.
