parmesan is probably the best cheese when used as an ingredient, I was making meatballs for the first time the other day and smell and flavor that parmesan adds is incredible, no wonder the italians revere this stuff.

I think aged Pecorino may win for best overall cheese. You can grate it onto pasta or into meatballs for a similar effect to Parmesan, but it's not quite as dry and crumbly, so you can eat slices of it. Sliced Pecorino drizzled with truffle-honey or fig preserves is fucking great, and is a common appetizer in Florence.
