17114666 No.17114666 [Reply] [Original]

Daily reminder that Chef John is based.
So based, that Helen Rennie used one of his recipes as the starting point for pork confit.

>> No.17114672

Trips confirm
I don't get why people don't like Chef John, he's not creating Michelin star meals, he's creating good, tasty meals that you can do at home with minimal experience whilst teaching you about the method that is cooking

She used an older recipe of his (the one for pork carnitas) as inspiration for her pork confit method.

He's the opposite of want I want in a chef. Middling recipes for everything. I was surprised to see he was popular as I avoid using him. Add on the fact that his fans tell you why everything you don't like about him is actually a good a thing, and dislike has shifted to hate.

don't really get the "cooking is a performance sport" mentality. of course there is a wealth of areas/skills to dive into and really hone and master it as a craft, but its basically never physically difficult. you wouldn't decide where to eat based on how much literal physical exertion a chef put into the food.
what makes one recipe more difficult than any other?
the only things that come to mind are specific techniques, which are simply practiced, or the general gestalt/feeling that you also get from simple practice.
maybe DBS/MCU fans who watched too many EPIC STREET FOOD COMPILATIONs where the guy dances/juggles/puts on a show to attract busy street fare and internet cameras.

Also, since nobody posted her video for pork confit, here it is:

He started his channel as a way to create a digital cooking school, and kept it in the form of recipe videos since people really liked them. My own cooking has moved into more advanced territory for some things, but you can’t beat him for variety and solid techniques.
