How the fuck do people eat this shit? Literally the only time I can stomach it is if I use enough onions, garlic, spices, and tzatziki sauce that I can't even taste it. If I even get a whiff of liver taste while I'm chewing I want to gag.

I know exactly what you mean. You need to steep it in salt water and rinse it couple of times before cooking. It'll go away after that.
Also use lamb liver, it's way better. Just cut it into pieces, skewer it with some tail fat and grill it on charcoal. It's insanely delicious.

1. Liver must always be eaten as fresh as possible. The fresher, the better.
2. The animal must be butchered correctly or the liver will have too strong a bitterness and iron-y flavor.
3. The liver must be cleaned thoroughly and have its unwanted excesses trimmed.
4. High heat, olive oil, brown all sides, cook for short time - not to dry, season when done not before.
5. Garnish with parsley.

If done right you will get the flavor of the liver out correctly and are free then to explore variations and spice well.
