I dunno it just seemed like they put cheese on odd things. lots of hotpots. korean bbq but besides the kimchi I'm not really seeing whats so korean about it. All in all I was entirely unimpressed but this is based off of a korean worker community in vietnam (hanoi they had their own little koreatown for all the foreign workers there) and not korea itself. I've had korean fried chicken from like 3 different places on the west coast and thought it was worst than kfc though.

Tteokbokki was my gateway into Korean food, it's rice cakes cooked in a spicy sauce. Served with rice or noodles, some green onions for topping.
I like sprinkling corn over the top with some cheese and then broiling it until it's all gooey and delicious.

Sundaeguk, jjajangmyeon, gopchang (grilled, not soup), gamjatang, mulnaengmyeon, pajeon, suyuk/bossam, dakdoritang, dakgalbi, tteokbokki, gulbi, can't think of many more right now but these are some of the most enjoyable for me.
You should also learn how to prepare a few different banchan or types of kimchi, e.g. yeolmu or water kimchi

The goat though? Rice and gim. Get high quality short grain rice though, and buy a few different varieties of gim. Some of the brands taste like ass. Don't put too much rice either, it shouldn't be as full as gimbap or sushi. And don't bother making them each individually with chopstick or whatever. Better to take the gim in your hand and pinch a bit of rice, then eat it immediately. If you let it sit, the steam from the rice will make the gim soggy.

Kimchi Stew
- Saute in large stock pot:
>2 shallots
>2-3 cloves of garlic
>1 onion
>3/4-1 cup of kim-chi
>1-3 tsp of chili paste
- Caramelize meat in pan (3/4 kg -1kg of either stew beef or pork) with some butter and vegetable oil
- Add meat to stock pot. Add:
>1 container of beef or pork stock (900ml)
>3-4 tbsp of fish sauce
>3-4 tbsp of soy sauce
>1 tbsp of seasame seed oil
>1-3 tbsp of deglazed pan drippings
>1/2 - 3/4 cup cubed tofu
>3 green onions diced
>1/4-1/2 cup cilantro (optional)
>vegetables (optional — broccoli, spinach, cauliflower)
- bring to boil
- reduce and let simmer for 30min

Serve by itself or with rice, which you can dump into your bowl.
