It turns out you can make the hollandaise sauce a lot fucking easier by making it with a roux. You make your roux with butter, then add your milk and egg yolks, stir constantly until it thickens up, optionally add more butter.

Yes a bechamel, but with egg yolks and more butter than bechamels usually have. the roux just stabilizes the sauce because you always hear how people fuck up hollandaise and it breaks/separates easily.
