You should be equally worried about the stability of the fat you're using as you are about the smoke point.
There is a chemical difference between saturated and unsaturated fat that makes saturated stable at room temp, and unsaturated quite reactive.
This makes unsaturated fat prone to oxidation which can cause a host of horrible health outcomes if you ingest them at this stage.
Polyunsaturated fats like those found in s0ybean oil, corn oil, canola oil, grape seed oil, any seed oil really - are the most unstable, even more than monounsaturated fats like olive and avocado oil.
They have been proven to oxidize simply by existing at room temp DAYS after they're processed and this is before they even make it to the grocery store shelf for you to buy and THEN heat it up on your stove, oxidizing it further.
Ingesting oxidized fat can cause cancer and be very inflammatory. In combination with high blood sugar, these oxidation products can damage the LDL in your bloodstream which makes them unrecognizable to the LDL receptors on your liver, meaning they won't be taken out of circulation as they normally would be. They'll end up in your artery wall, and eventually they'll cause a heart attack.
To be the safest with cooking fat, I would always choose saturated. Its the most stable, chemically, and has a high smoke point.
