It's not about the taste of the vodka, it's an emulsifier. It binds the water and fats from the cream together to make a coherent texture.

This. The same emulsifying effect could be achieved with cooking wine but it would offset the flavor of the cream and tomato. Vodka is used because when cooked out, it doesn't leave much of a distinctive taste apart a slight sharpness, which is also pretty good.
