sheet pan, oil, and just roast them. it's extremely easy and a great way to start with individual veggies. i was a picky eater growing up and only just got out of it essentially doing that and salads. keep in mind you're likely comparing raw veggies to highly processed or well cooked food. I know I was and I never put together that double standard. Yeah broccoli tastes worse than a burger but it probably tastes better than raw beef.

Try eggplant gratin. It's easy as hell and tasty.

Otherwise just make grilled zucchini with or without garlic butter, or brussell sprouts with olive oil and balsamic. Don't be afraid to just use them in meat dishes, they don't need to be a dish or side dish on their own. Think Da pan ji (big plate chicken), stews, braises etc.
