There's plenty of wild plants that can be harvested for food but I'd never do it with stuff growing near roads. If you don't know what it is, don't pick it.

Perhaps its just the variety or the age of the plant, but when I tried carrot leaves they are very bitter. I grow my own carrots and believe me I'd eat them if I could. I do eat the leaves of celery and while somewhat bitter they can be nice in soups and salads.

The carrots I buy don't come with leaves. I'm also pretty positive that a lot of people buy baby carrots instead of whole judging from the amount of recipes I see that use them.
