The perfect sandwich is fresh, thick slices of vine ripened heirloom tomatoes, a good slather of mayo on toasted white bread or sourdough. Pepper may be acceptable, but is not necessary. Salt has no place on this sandwich. It also must be served open faced.

I'm just saying the ways to improve this sandwich is toast the bread in a fat and salt the maters. Toasting the sandwich takes significantly more time than just adding a pinch of coarse sea salt and letting the salt sweat the tomato so if you're in a rush or just particularly lazy I can see how that could get omitted but you sprinkled black pepper on it which means you probably moved your hand past the salt shaker to put pepper on. Poor show.

Our verdict: the OP sandwich is bland and tastes like commercial mayo with a weak white bread soft texture. Can't even taste the pepper. The toasted and salted sandwich is a night and day difference. With salt on the tomatoes and letting them sweat instead of tasting like mayo the mayo, smoke, salt, fat and brioche richness come together to put the tomato first and frontmost in the flavor. It's just simply a better sandwich in every way.
