i just whipped a stick of butter with a pint of heavy cream into whipped cream. with freshly mortared black pepper, and salt. i'm boiling potatoes, and i'll fold the buttercream icing into the potatoes.

my reasoning is that while cream in potatoes is good, it tends to wet them down and make it heavy. if i can create a foam structure to the fats, and it stays at all once in the hot potatoes, it'll be simultaneously richer and lighter.

If you "over"bake a potato for about 1 1/2 hours without stabbing holes in it then the consistency of the baked potato will be very close to mashed potatoes without any of the work. Just rinse the dirt off the potato and sit it directly on the oven rack, no pan, on 400°f. It's so fucking easy, almost zero work, but it takes patience.
