So what is stir fry and how many types are there? I was talking to someone on discord and I mentioned I liked stir fry, but they got confused and asked me to specify. I thought it was protein and vegetables cooked in a wok with oil, I even looked it up and it said the same thing, but they got even more confused. Is that not stir fry? Can someone help me understand?

Stir fry is a technique, not a dish, so you should have specified what ingredients/proteins you like, (chicken, steak, brocolli, lo mein, ect.)

There are different types of stir fry like Chinese, Vietnamese, Korean, Japanese, pretty much most Asian countries have their own, but I'm not 100% positive on what makes each different, just that they're "different"

I think the main differences is the herbs and spices they typically use. I'm not an expert on this either but I'd associate szechuan pepper with china or gochujang with korea for example, although sezchuan pepper is available worldwide and I wouldn't be surprised if other countries had equivalent fermented chili pastes.

stir frying is a wok technique. Most internet stir fry recipes never capture the actual essence of wok cooking. extremely high heat, ingredients pre-oiled to increase heat contact. they will never be Chinese.
