I heated up this type of cheese in a pot. The spoon I used to scoop the cheese fell on a surface that I think is unclean (No dirt or dust). Someone put the whole spoon in the pot.

Can I reheat the cheese to kill bacteria? If so, how and how long?

I see all these charts on Google, but I'm not sure of what to look at.

Pick a temperature and keep the sauce at that temp for the corresponding time and you will have effectively pasteurized the sauce.
