Tuscan soup is without question the best and one of the easiest to make

Basically
italian sausage

onion
garlic
potatoes
chicken stock
heavy cream
kale
parmesan to finish

Chicken enchilada soup. A lot of restaurants pass it off as chicken tortilla soup, but chicken enchilada soup is a little different and usually much thicker. But it's fucking delicious.
