I want to meal prep salads for lunch for an entire week.
What veggies will still taste good after 5-6 days?

This. Cabbage lasts for ages. Even as a salad made with vinegar, oil, sugar and salt it lasts for days.

5 or 6 days is quite a long time for most prepped veg to last. You might be best prepping all your stuff and combining on the day, if anything looks off you can just toss it instead of ruining a weeks worth of meals.
I would suggest carrots, onions, maybe radishes, whole cherry tomatoes if you can get them fresh and as mentioned cabbage. I'd say any leafy greens and most cooked veg is out. Pickled veggies might be a good option, also olives and capers. I would avoid adding any dressing til the day you eat them else things might get soggy. Consider adding nuts, seeds, croutons, cured meats or cheese.

That gives me an idea, you could pick up a bag of frozen edamame beans or garden peas or cans of whatever legume. For frozen legumes if you toss in a handful from the freezer in the morning they should be defrosted by lunch time and canned beans or whatever would keep for a couple days in the fridge and nothing beats cracking open a nice cold can of beans in the morning.

Do you have a farmers market near you OP? The one I go to sometimes has even better quality produce than the all naturak food market and is much cheaper. I had cup up all the produce for a salad for the week and all of it lasted without wilting or getting slimey and spoiling. Picrel is the rainbow chard and purple carrots I got for $3 each and it tasted great
