Bro, it's a 12 inch skillet. I ate two sausages, two slices of toast, one beef patty, one egg, some of the potatoes, and some of the beans. I also ate 200g of rolled oats topped with peanut butter and two cups of coffee before this. I didn't eat anything yesterday so I thought I would be able to eat a little more. I guess the coffee suppressed my appetite. On a side note I've been to the toilet twice in the past 40 minutes.

Thank you, Anon. If I tried browning the cheese I would have overcooked the eggs. They are already firmer than I would have liked. You are correct, it would have been nice with caramelized cheese. The area where I think I did the worst were the potatoes. They weren't as crispy as I would have liked. I cut up and boiled some Yukon Gold potatoes and left them in the colander in my air conditioned room overnight (fridge was full). Then I pan fried them, but the crispy crust kept sticking to the cast iron pan no matter how much oil I added. In the end I was left with some crispy bits mixed in with some mashed chunks. Anyone have any tips on how to achieve that classic home fry crispy shell?

That's exactly what I did, but the heat was still cooking the eggs. I think next time I will put it in right after adding the eggs and cheese, instead of waiting for the eggs to fry.

I tried that last time. The results were better, but it took way too long.
