Not a staple, but an occasional side. My mom always made it paired with pork chops and broccoli, things that are kind of plain and need a rich, carb laden side dish.
I've eaten it as a meal many times, but that's not a habit you want to get into. Americans grew up eating this at home and school, so you can say its culture I guess.

I think so. I am not white so I don't know for sure but I think mac and cheese is amazing if you don't get it store bought. I like it with a bit of paprika, chilli powder, and crushed cayenne for spice. I make my own cheese sauce which is pretty simple to do and then add blanched broccoli and bacon bits and pan fry it all together in a wok until the cheese sticks and kind of browns just a tiny bit. I assume it's ok if you have it once a week and have reduced fat meals for the day.

Not sure why mac and cheese brings the snobs and autists out of the woodwork. A roux or citrate-based Mac and cheese with quality pasta, a blend of strong cheeses, and some wine or beer for additional complexity can be an absolutely delicious dish worthy of 'adultness', whatever the fuck that's supposed to mean. Make that cheese sauce out of starchy pasta water and pecorino romano, or melt it in a pot with wine for dipping bread into and suddenly you're eating a 'sophisticated' dish for adults. Absolutely arbitrary bullshit.

post partum depression hit mom hard. she stayed cooped in her room for most of the day. dad couldn't help because he was working long hours to keep us all afloat. so on weekends and school breaks, 2nd grade me, and my older brother, were on our own. too young to cook for ourselves. But we had a microwave, and a can opener, and that meant we had chef boyardee. i remember afternoons of dragging a heavy chair to the kitchen, standing on it to reach the overhead microwave. the scent of that red sauce, the stains it left. was it healthy? Probably not. did it taste good? not consistently. but it was cheap and accessible, it was grain and salt and protein that kept me from childhold malnutrition. So, Thank you, Hector.
