if you have a stand mixer you can get a pretty similar texture by mixing the hell out of it and then cooking it like a meatloaf
then you can slice it really thin and fry the strips
the seasoning is just your regular mediterranean blend of spices; oregano, parsley, dill, marjoram, garlic and onion powder
honestly i think of it a bit like greek bologna

I have done the kafta/meatloaf version of a gyro loaf to great success. I have cooked it in the oven and recrisped sliced on a griddle and on the grill both. I like the smoke of a grill. I usually do 50% beef, 25% lamb, 25% pork. I usually first blend the spices with onions, garlic, peppers, herbs, to chop and blend in a food processor and just add the meat in two batches with a few pulses to blend. It's impossible to overblend or process gyro meat, but it only takes a couple of pulses. Even a little chunky, it's easy to re-grill, even from frozen.
I have used various gyro recipes online to get the flavors right, or just use za'atar blend. No matter what, I think you need thyme in there to taste right to me, as well as bay. Rub the whole thing in olive oil to brown it nicely on the outside.
I straight up want some pickled cabbage in mine, maybe some tahini, sliced cucumber, or else, just grilled onions and lemony-garlicky, tangy tzatziki from thick whole milk greek yogurt.
