I was in a mac and cheese hate thread the other day and it inspired me to make some at home. First one I made was raclette with soprasetta and it came out nice and greasy. Will post the other one in a sec

Second one I made was poblano pepper with cheddar and pimento cheese. Wanted to use green chiles but they were out.

Anon it looks like you just cut up hot dogs and threw them into mayonnaise covered penne.
Also fuck using penne for Mac n Cheese. It's MAC n Cheese, not PEN n Cheese

That's understandable, I prob should have mixed it it rather than put it on top. Picrel is the other half of the soprasetta

Melted cheese milk and butter in a pot for both, I just used too much pasta and had too small of foil containers

use a little flour and make a roux, then add cold milk until it thickens, then take off the heat and add cheese

Thanks for the tip anon, I had thought of adding cornstarch but it seemed like it would have been too thick after but I'll have to make a roux next time
