Roasted a batch of a very fruited dry process Ethiopian to only just city. Acidity is more pronounced, but the cup is noticeably less fruity and sweetness is underdeveloped–less rounded and intereting. This one tastes better at city+, even pushing full city. You never really know what you're working with until you try it out. Some natural Ethiopians taste the best when you stop right at the beginning of first crack, some taste best at the end of first crack. Continually amazed at how every single coffee desires a different roast to max out potential.

When I was younger I used to always use a french press. As I grew older I switched over to manual drip ("pourover" wasn't a common term at the time) because it is a cleaner, more nuanced cup. If I needed a stronger cup to compensate for less body, I simply used more coffee. As far as time-wasting goes, it's a wash in my opinion. Cleaning the press pot is as much a pain in the ass as standing there watching the funnel for a few minutes. Pourover does make a superior tasting cup, but thre's no accounting for taste. Do what you will.

grounds to water ratio? doesn't even matter, can be made concentrated no problemo
fine tuned water temp? any refrigerator is fine, you could even just leave it on the counter at room temperature.
Even grind consistancy and bean quality kind of go out the window.
Cold brew always comes out smooth with zero bitterness, stronger than typical hot brewed coffee. Its easy to dilute if its stronger than you'd like, its almost better that way because it pairs with ice so well.
I think the only reason people hate on cold brew is because its usually served cold, and "most" cold coffee has traditionally been hot brewed bitter coffee that tastes like shit when its cold.

I also find hilarious that you think a piece of machined steel like this is worth more than 5 bucks. Plastic molding and motors are basically free too. A properly made grinder should barely reach 30 dollars in total manufacturing costs. At 80$ it is more than reasonable to expect decent quality. Manufacturers are just absolute jews (much more than I expected) and you guys are willing to put up with crazy inflated prices that allow them to make a shitton of money of f their massive margins. But then I guess I will have to put up with them too so joke's on me.

Are you serious? Do you have like, zero background knowledge of precise machining? Look at the geometry of this 98mm ssp burr. Now a second one has to be manufactured e x a c t l y to spec to fit with it. They're not copypasting some files to 3d printers. If its fucked up or gets installed misaligned(like screws into untapped plastic supports in a shit tier grinder) its going to change the grind distribution.
Why is that important? Pieces of coffee of different sizes are going to extract at different times. You understand when you're grilling the smaller pieces cook first and will burn if you leave them on the heat? Same shit. Coffee is brown bean water when its in your mug, but theres no way you can argue its not chemistry when its being made. Your food tastes better and gets prepared quicker when you're working with a sharp knife.

Different style of brewing. It has an extremely rich and syrupy texture. It's also pretty hard to fuck up. 10 seconds too far and you ruin an espresso, it'd take 10 hours for cold brew. Personally though yeah I'd prefer ice in an espresso or a v60 brew but each to their own

Some Chinese manufacterers are making exceptionally well-machined coffee grinders for pretty low prices. Same with electronics, tools, camera lenses, etc. It's almost unbelievable. They can make really good stuff if they want to, but also really bad stuff. Tides are turning in general, though. Paradigm shift incoming.
