For jambalaya you basically cook gumbo and put uncooked rice into the gumbo. You put it in the oven and the rice cooks and absorbs all the gumbo.

About 5 hours until the I had my first bowl. I had some more for breakfast the next day and it was even better since there was more time for the flavors to meld (or for whatever voodoo magic causes gumbo to taste better over time)
