professional chefs take care of their palate the way professional tennis players take care of their hands.

And palate fatigue is a very acute, short term thing, that usually only is a concern for taste testers.

The idea that chefs have built up "salt tolerance" is literally just superstition from the fact that restaurant food is usually saltier than homemade food. And that's because homecooks almost always under-season, unless they're fatasses in which case they wildly overseason.

Gordo's burger is definitely not over-seasoned.

professional chefs use a lot of salt because they work with almost exclusively fresh ingredients. a home cook might use a lot of canned/preserved ingredients with salt added, so if they were imitating gordon ramsay's use of salt it might come out tasting too salty for them
although in the case of this video most home cooks would probably be using fresh ingredients for this as well, gordon's just using a lot of salt because those are huge patties
