So long as the quality isn't compromised for profit it's fine. They're just appealing to trends to increase sales. Their business thriving should prevent things such as ingredient switching, like switching to corn syrups or using weird emulsifies or oils. Once they do that it's time to buy the hipster gelatos for $6 a pint.
