its colloquially referred to as back-bacon in anglophone parts of the country, its not so different from thinly-sliced porkchops & often contains belly-meat as well despite the name.....the curing process makes all the difference, though. its very tasty

also, the pastry thing is called a yorkshire pudding.....its not really Canadian food (from the UK), the one pictured doesn't look great either. picrel are some better lookin ones
