Paté is a form/shape of food that has been processed/rendered into a fine paste.
That's why you always hear/see the name "goose liver paté", and not just "goose paté". Paté isn't the liver, it's what's been done to the liver, and the form it is currently in.
You can make paté out of any animal or part of it - heart paté, liver paté, steak paté, salmon paté, etc. You can even make paté of non-animal ingredients, like mushroom paté.

Liver is just a very common ingredient to make paté out of, because, being an organ, it's easy to just mash into paste, and you aren't really sacrificing any fibrous texture it would otherwise have if prepared/cooked other ways.
