It's PM 3:45 and I'm full as fuck.
In two-three hours I'll make myself a fruit salad (320 Calories at most), and an hour or two after I'll make myself a cup of tea latte (220 calories at most) putting me pretty much right where I want to be.

I'm 120kg, 190cm, and I'm going to the gym and punching a bag at home.

My problem isn't losing weight. I can lose weight consistently and reliably - I've been down to 110kg before.
My problem is sticking to it and not rebounding.

Seconding this is most likely because your meals are still huge as fuck. All it takes if for you to eat two "real" meals and day and you rebound.
As someone who has also eaten 1500 calories in one meal while dieting successfully, I ain't gonna tell you you're doing it wrong. But something like this should be the exception.
For me, the real trick was the fact that I could eat 3000 calories in one day and still lose an average of 2 lb per week because some days I would only have <= 1000 calories. All about dat rolling average.

Out of everything I tried, cutting portion size had by far the worst result. Even straight-up fasting feels better than cutting portion sizes.

You guys are also grossly overestimating the size of that dish. It would be in the range of 1100~1300 Calories at most and that's only because of all the butter it has which you can't actually see from the image. The whole "1500 Calories" came from a healthy amount of overestimation so I won't eat more than I intend to;
>266 Calories for bread (highballing, there's less than 100g of bread there)
>240 Calories for avocado (highballing, there's less than 150g of avocado there)
>300 on eggs, (highballing a lot - they weren't drowned in oil)

I would much prefer having a single satisfying meal a day than multiple unsatisfying ones. The reason I rebound is never that I feel hungry - it's because I grow tired of cooking for myself or at least thinking about what I'm eating and how much I'm eating, and going back to ordering food online, buying chips and candy bars, drinking soda, etc., etc. Everyone has different eating habits and what works for you might not work for me and vice versa.
I'm also a big guy. I can slowly lose weight by consuming up to 3k Calories daily. I'm so fat because I eat more, much more. Because I would eat that 3k Calorie pizza during the day, chug a 2l bottle of coke and in the evening I would grab four bags of Doritos and finish them with a liter of Red Bull. I can eat a full course of satisfying meals throughout the day and be fine as long as I don't fall back to eating a shitload of snacks and somewhat monitor the calorie-dense food intake (fewer sweets more buckwheat).
