Same reason you'd mash potatoes rather than bake them, certain textures work better with certain dishes. Also mushy peas uses dried peas which have a longer shelf life compared to fresh. Not as much of a thing now with modern canning but it was more useful back 150 years ago.

Cod was always the fish of choice for fish & chips in bong, but due to shortages we switched to haddock. Honestly they both taste so similar it doesn't matter. Both are really nice.
