What kinds of knives do you guys here have? I just bought myself a new chinese vegetable knife. What do you all use as an all use knife?

>> No.16791920

my general-use of choice is a 20cm chef’s knife from Wusthof.
I have a couple of weebswords I like to use for deboning birds or vegetable-slicing

A 20$ Ikea all purpose knife. I sharpen it and it cuts like any chink/kraut shit.

This i bought a high carbon steel one for something like 50 bucks. I literally use it for everything and it's so fucking sharp I can split a single hair on the edge.

Any knife works as long as it's sharp.

8" Wusthof Classic Chef's Knife. Very sharp, I like it. I was cooking while hammered and I easily chopped the tip of my thumb off.

I have the exact same knife. I used it to chop up kimchi yesterday. It's fantastic for vast quantities, holds its edge incredebly well but it is quite heavy and I needed to file down some sharper edges that were chafing my fingers. The wide flat bevel seems pointless and Im' contemplating on grinding it down to save weight.

You've made a very funny joke since I've used those exact same knives in my life and I know first hand how fucking awful and unusable they are.

I use picrel absolute beater for my home knife, it holds a great edge, cuts damn near anything nicely, sharpens easily and doesn't wear out quickly

And then for work, picrel, plus a 6" global chefs, and a tojiro F-737 bread knife

>> No.16794500

Victorinox 10"
Tojiro 5"(birthday present, doesnt get much use)
generic serrated bread knife
paring knife
F.Dick flexible boning knife
an old cheap chef knife or smashing through bones

im considering buying a cleaver, any recommendations?

Why would you buy a knife that's not polished? The metal rubs off into the food.

>> No.16794616

My brother got some really shitty knives, just 3 of them and they are all humongous and unwieldy plus dull as fuck by now.
I have no idea if he will appreciate and care for a decent priced knife so I'm going to start with some IKEA stuff just because it's cheap and I can hassle them if it breaks.
Primarily looking for a vegetable type, which of the following look like they don't have an obvious catastrophic flaw? They're all cheap so I don't expect much but maybe you can help get the least worst one?

https://www.ikea.com/se/sv/cat/koeksknivar-15946/?page=2 (no idea if it redirects you somwhere else depending on country)

I'm thinking one of the IKEA 365+ with a Santoku shape. They don't seem to have a Nakiri alike one.

the briljera ones are vg10 steel they are nice. i used the 365 and theres nothing wrong with them , theyre great for the price.

I got this set as a Christmas gift last year, the local culinary school recommends them for their beginner classes because they are decent steel they hold an edge and not extremely expensive.
