The taller the animal, the stronger the taste. So start with chicken livers, put bacon in pan and soften some onion and garlic in it's fat. Add some butter and livers and stir-fry for 1-2 mins, until they're crisp, but still pink in the middle - cut 1 in halve to check. Remove livers when done, add some wine/sherry and some capers to pan, simmer for a bit while scraping bits from the bottom, add livers, done. Eat with toast. Or look for an other stir-fry/grill recipe that appeals to you.

The other day I realized I had never had liver before, so I got some while out for dinner. Loved the first bite, and realized how much I had been missing out. Didn't care for the second piece as much, and the third piece genuinely almost made me throw up, worse than any food has in years. Seriously, what the fuck? I have this exact same problem with Unagi. I'll order some sushi or an unagidon and the first bite I'll almost cum. By the third bite I'm overwhelmed and disgusted and won't want to touch it for months. I just assume it's like this if you have a somewhat sensitive palette or because stuff like liver is too rich to eat much of it.
I would recommend trying cooking liver in with other stuff though. Made some cajun rice awhile back with some diced chicken liver mixed in, thickened it up and gave it a texture like I served it with gravy, was fantastic and didn't have any of the supreme richness and overwhelming flavour of liver.

bec of the texture, liver is not something you can eat a lot of in one sitting like you would a steak
its best when its served as a part of a dish, and not the main course, even though its great.
Its why in eastern countries, in places that specialise in mixed meat noodle dishes, you can find options to only have tendons, intestines or stomach alone, but you'll never see places that will serve liver alone.
Liver is always served alongside the other parts.

Try canned cod liver. The stuff from Iceland is delicious and tastes nothing like beef or chicken liver. It's extremely soft, which feels kinda cool too. Likely not quite as nutritious, but still nutrient dense and great for you. Also a bit more convenient given that it's canned and stores easily for long periods of time.
