Really craving beef stew. Wife is vegan and does most of the cooking (not complaining, her meals are delicious) but I plan on scratching this itch this weekend. What are some good recipes?

>Carrots, celery, onion
>Red or yellow potatoes
>Beef stock
>Red wine (Cab, Merlot, or Bordeaux)
>Herbs (rosemary, thyme, bay leaf)
>Tomato paste
>Frozen peas
>Salt and pepper

Brown meat (can dust in a little flour to thicken the stock); remove meat and throw in your onion to brown a bit; then add tomato paste to cook out; add celery and carrot to sweat; throw meat back in along with your wine and herbs; let simmer and reduce for an hour, then pour in your stock and potatoes; let simmer for another hour while adding S&P to taste; about ten minutes out pour in your frozen peas, and enjoy once the peas are tender. All of this can be done on the stove top if you're too lazy and broke to buy a dutch oven.

It does not matter most of the time when you add salt to a stew. But generally its best to add salt and herbs near the end of the cooking process.

When you buy beef stock is best to get some Bone Broth stock because it will be higher in collagen. Just put in the Celery, Carrot and Onion. Add garlic and mushrooms if you like those. Add the peas later so they dont get overcooked. You can add some corn too if you want.

Might be obvious but wouldn't that just end up with lumps of roux everywhere? Assuming you toast/mix the roux in a saucepan and then pour it into the hot stew.
Am I wrong in assuming you should ladle stew broth slowly into the saucepan until smooth, then pour THAT mix in and stir? I admit I'm a cooklet but I've had enough disasters to intuitively feel that dumping roux in wouldn't work well

Of course you could just flour the meat but I have no idea how you'd get the thickness right that way so I assume you'd need to adjust anyway unless you're some kind of savant (plus I'd rather not thicken before simmering is mostly over you'd think it'd scorch)

no roux won't clump up. putting flour on the meat is nice for browning but it's not a substitute for roux. you only really have to worry about clumping if you try to add cornstarch or flour directly to something for thickening. making a roux/cornstarch slurry will avoid that. In the jean-pierre video he does this weird thing sifting flour in and then dunking the sifter in and stirring it in the water to work out lumps, but that's a shortcut that will give you inconsistent results. he also left some of the sauce in the sifter with lumps left behind. he likely still ended up with a few lumps in his stew.

on a side note, I bought a few food service shakers that have different style perforated lids, and I use one for flour. I am lazy and use shortcuts but I don't recommend them until you are more comfortable with techniques. I will just powder flour into sauces if they haven't hit the right consistency and you can skip the sifter. if you really care, run the flour through a blender before you load the thing but I haven't had any issues.

This unironically is the barebones template. However, I have a few things to add.

If you use bone-in meat you do not need beef broth, as whatever broth you use will become beef broth (highly recommended, bone in short rib, the thick ones)

It’s better to default to a large can of crushed tomatoes (and I do not like tomato sauce since the texture has less variation and generally more salt/herbs which you do not control).

Should be a bit more vegetables than beef by volume.

Spices recommended by me: cumin, garlic powder, ginger powder (yeah, ok), red pepper flakes, white pepper, black pepper, salt, paprika (smoked or not), very little but a bit of oregano. To me, the first 3 spices 2 parts, the next 3 spices 1 part, then 1/2 part for the rest. Maybe a bit more of paprika and salt at the end to taste.

But yeah, sear meat, veggies in, get some edge color, liquids in, spices in, pressure cook 35-45 min, final tasting for flavor (also do not rule out soy sauce), maybe reduce for another 10-15. Good stew.
