Good quality lard? I can find cheap lard in most grocery stores but it's the hydrogenated stuff with preservatives. Plain lard in health food stores is where it's $1 per ounce but that's too expensive. I've heard Mexican markets will sell cheap fresh lard since they use it a lot more often but I haven't checked any out yet.

So I decided to save the fat I trimmed off the duck breast I bought. Normally I slice off a bit to use immediately for cooking said duck or whatever vegetables I'm cooking for the meal and toss the rest but it feels like a huge waste as I usuallywill but duck breast/legs once a month. Does anyone know how long the fat can keep for in the fridge, and is there any particular way I should store it? Currently just have it in a sandwich bag in my crisper drawer.

Yes, I use beef fat for almost all cooking. I just buy large quantities of marrow bones from my local butcher for $0.79/lb. I roast them off in my oven and store the fat, then make stock concentrate with the bones or just give them to my 4 dogs.
