I'm a snob within the segment. I'll be snobby about expensive restaurants compared to other expensive restaurants (especially about service), but I have no problem eating at cheap places and wouldn't think to compare them to anything other than similarly cheap places.

But I would compare a hamburger across a spectrum of places since that's a similar category. Why pay $20 for a burger from a place if I could get something just as good if not better for $5? It's a fair comparison at that point. But in the same vein I'm not going to compare a steakhouse to a diner. You should know what you're getting in each experience

Everything. I want fresh ingredients, temp appropriate food that is not over or undercooked, and i want each meal to have a good mix of protein, fats, carbs, and fiber with a heavy focus on chicken, fish, and a good blend seasonal veggies. I also like my coffee fresh, well ground, and brewed with water that doesn't taste bad. Unfortunately i am the only one who cares about this in all of my family so i do all the cooking and no one bothers to learn or appreciates what i make. Sure. I think there’s two main lines to classify slaw. First, how it’s cut, either rougher cut with bigger pieces or fine cut through a food processor. Second is sweet or vinegary/salty. With that in mind, I think there’s zero reason to put vinegar slaw on things because you’re looking for a sweet, creamy counterbalance to the sauce on something like a pulled pork sandwich or a hotdog that, in my region, will also have beanless chili on it. That leaves us with sweet, but rough cut or fine cut? I argue fine cut belongs on food while rough belongs in a bowl. While there’s not a lot truly WRONG with the rough cut, the actual liquid of the slaw sometimes has a hard time sticking to it. If this happens, the coleslaw will sort of “crumble” and fall away from what it’s on. To experience a prime example, go to a Cookout and order a hotdog with chili and coleslaw if they’re present in your area. Fine cut rarely has this problem and is more likely to behave as, say, relish would. I believe this is a quick way to judge whether a person running a barbecue joint is more than just another goon burning meat for 12 hours and drenching it in glorified ketchup and simply serving slaw because it would be weird not to. It might be a weird hill to die on, but it’s the one I’ve chose.

Steak. I'm not a snob with the seasoning you use (as long as you aren't a retard who uses steak sauce) but I am a snob about how it's cooked. If I order my steak medium rare, I expect it to be and will tell the waiter to send the steak back if it isn't cooked that way. Worst experience I've had with this was getting an extremely well done steak, send it back, then receive a fucking blue-rare steak next which I also sent back. Being able to cook a medium-rare steak is one of the most basic fucking things a cook should be able to do yet it is fucked up all the time.

I went on a date with the best girlfriend I ever had, I ordered my steak rare. They gave me something along the lines of well, so I asked the waiter to go back and ask if they could bring me a rare steak. They brought me back the same piece of meat, saying they could not cook something that could give me a foodborne illness.

Mexican food. The ingredients are cheap and basic but quality varies massively.

Everything comes down to fresh, organic products and proper preparation.

>Well marinated pink carne from a flank steak vs overcooked greasy/salty trimmings
>Fresh crunchy jalapenos vs dry powder
>Tortilla cooked infront of you vs microwaved shit
>Real tortilla chips
>Pinto/black bean vs refried mush
Ect.

It's all so simple but most Mexican restaurants make the greasy grandpa shit and charge you $10 for .5lb of leftovers. Fucking lazy beaners.

cookies, specifically chocolate chip, but i have a lot of options on the other varieties of cookie. sounds dumb but it's because i just like them and have existed for enough years and it's been my mild niche in food. as in it's the thing that i enjoy enough to specifically go for but not enough to be my favorite and be burned out in a few years. chocolate chip cookies should be
>a good base that can be tasty on it's own but will likely be missing something without chocolate chip
>NOT DRY OR CRUMBLY OR CRISPY
>favoring buttery flavor over sweetness, this isn't to say that it should taste buttery. it's to distinguish the flavor, as in it should not be too sweet. if it does then it's bad, but many chocolate chip cookies are just very sweet and that's not good. the primary sweetness should come from the chocolate chunks in it
>on the topic of the chocolate, it's chunks of chopped chocolate. not too big, but medium sized. although it's called a chocolate chip cookie, it shouldn't actually have traditional "chocolate chips" in them.
>oily chocolate chips exist and they are bad
>they should be chewy, in a nearly approaching brownie texture
>it's easy to overshoot the chewiness and make the cookie too oily, and this is bad.
>many many many cookies are just straight up crumbly or dry in texture. chewy cookies are where it's at.
getting into nuances here
>any sort of toffee cookie ends up being a good cookie base in my experience, like if it was chocolate chip it'd be a very good chocolate chip
>browned butter is good in chocolate chip
>a bit of vanilla is often the element that can add dimension to the base but at the same time it's like the butter, you shouldn't be able to taste it really.
>for whatever reason those m&m type cookies are often a horrible base.

the best chocolate chip cookie that most people can easily find is the two pack from quickcheck. that sounds insane, i know, but it's very good.

>> No.16738516

>>16738496
on the topic of other cookies
>chocolate chip is best
>those "double chocolate" style cookies or cookies like pic related can be good if they're closer to chewy-brownie texture but not fudgy or overly chocolatey. it's hard to describe but they've been very good. i've also had them with marshmallows and that's very good.
>peanut butter cookies are good if they're chewy but they're often not, and sad and dry.
>oatmeal raisin is underrated, and if they know what they're doing there's cinnamon flavor prominent in it. it's a good litmus test for cookies
>black and white cookies are very divisive and in my experience you just need to be in the mood for them. it happens once every few years.
>sugar cookies are much the same way, you need to be in the mood for them. if you're not in the mood for chocolate but want a cookie then these are often a good option. 9 times out of 10 they're done well, unless they're super dry. people don't often mess these up and they're a safe choice.
>white chocolate macadamia is a less common variety of cookie but like, the less common out of the common cookies. it's okay. if it's really good then it delivers the buttery flavor of the macadamia nut without a lot of sweetness. there's a lot of variation here though, can be very hit or miss.

Not sure if this counts, but I generally hate sandwiches from sliced bread. If it's been grilled like a club, grilled cheese, fried pb&j sandwich, patty melt, etc., then I can tolerate it. But a turkey sandwich like that? The fuck out of here.

There doesn't seem to be any demand for bread where I live. There are no local bakeries. Walmart is your best bet if you want a "proper" sub roll that isn't cake-y like a hot dog/hamburger bun or chewy like the exterior of a baguette. I've never seen sub rolls at Kroger. Walmart usually sells them with a "french steak roll" or "brat bun" sticker. It's the closet thing to Subway, Lenny's, Jersey Mikes, etc. as possible.

It's baffling that more people aren't demanding stores carry something comparable to the breads at these places.
