I wanted to make mash potato so I peeled and chopped and put them in the slow cooker on high setting. After a few hours, I realised they wouldn't be done for a while, so I just got a takeaway burger, and then put it on the "warm" setting overnight.
This morning I checked them and they are hard. But I'm sure they were soft enough to mash last night. Can they go hard again? What's going on?

Either guy cooked them hard again, which technically should be possible or there really wasn't any water left, or not enough to begin with. Though slow cooking them for 10 hours or so should've turned them into paste for sure, maybe there wasn't enough heat and the potatoes were just chilling in a warm bath for the whole night.

Have you ever seen a potato?
Skins get soft and pliable when you mash the taters. Are you trying to mash Idaho baking potatoes or something?
Use reds, whites, yukon golds, whatever you like that has a thin skin. Most varieties will do.

OP, here's what you do:
Start a pot of water to boiling.
Wash and cut taters into 3/4" cubes.
Once water is boiling, drop 'taters in.
Boil for 10 minutes.
Drain water
Mash roughly (with potato masher).
Add butter.
Mash more thoroughly, mixing in butter.
Serve.
Enjoy.

If you can boil water in a pot, OR use a microwave, you can leave the slow cooker alone.
Here's one way to make microwave mashed 'taters.

Wash 'taters.
Cut into into 3/4" cubes
Place in lidded corning-ware with butter.
Microwave on high for about 8 minutes (my preferred time for two servings).
Mash taters, add more butter, maybe cream, cheese wouldn't hurt.
Microwave on high 2 more minutes.

What would even make you think to use a slow cooker? That's like toasting bread at 85º for 12 hours.

If you can't boil water, you shouldn't be trying to cook anything.
Despite all this, here's how you maker 'taters in a slow cooker.

Place 2-3 pound chuck roast in cooker.
Add chopped onion, sliced carrots and diced potatoes.
Optionally add chopped celery.
Add enough water to cover most everything.
Cook until chuck roast is fork tender.

Not really "mashed" potatoes, but as close as you're going to get.
Buy a microwave and/or hot plate. Sounds like you couldn't even heat up hot dogs.
