I like it in soups, adds that tortilla corny flavor, and has a nice texture. So, green or red pork stew, aka pozole.
As a child, growing up in the South, you used to see it on menus as a side, swimming in butter and topped with pepper, but I never enjoyed it that way all on it's own, kind of a grits flavor, but not as good a texture. It's better in soup, where it sucks up the broth and combines on your soup spoon with veggies. The flavor can't be beat, kind of the tortilla soup flavor.
