Indian food is one of the few cuisines that does vegetarian and vegan food well. Too many western vegetarian dishes try to imitate a meat dish (tofurkey, black bean burgers, etc) and end up being disappointing because they're an inferior imitation of meat.

A lot of westernized Indian food has a shitload of butter and cream in it. Most of the food I ate when I was in India for a few weeks was more balanced and less rich.

yeah anon, it's definitely helped me incorporate different flavours and textures into my life, chana masala and a nice bharta have become staples in my cooking.
I thought that garbanzo beans tasted weird without even having them, little did i know that i was missing out on falafel, that stuff is amazing

I usually make my own, it's a running theme in restaurants that the veg option in restaurants is usually bad (at least where I live), i once ordered a mushroom burger and it had no sauce, and a slice of raw cheese on top of it for example.
I usually pair falafel with a tzatziki sauce and throw it in a wrap with some roasted veggies or something to make it saucy.
Could also do pesto/mayo/ranch or whatever creamy sauce takes your fancy
