What the duck is a white potato? I'd say the Burbank russet is the potato of America but reds and Yukon gold are also very popular. You can get purple potatoes pretty much anywhere and I frequently trade weed for four corners potatoes with my local Navajo homies

I don't know a single American that eats any of those on a regular basis. Might have something to do with living in one of the skinniest states.

Most "home cooking" style cuisines are based on survival foods. Taters are cheap, fill your tummy, and easy to grow, so they become staples, like pasta or rice in other cultures. They become such an accepted part of life that it seems strange not to have them.
