If fresh onions are too strong for you, sautee them. Especially if you're cooking meats on the stovetop, have some cut onions (and peppers, mushrooms, garlic, etc if you want) set aside and toss them in a bit of leftover grease you have after you remove the meat. Just takes a few minutes and improves most any meat entree.

Roast/grill purple onions or use them in salads.
Sautee white ones go with almost anything.
Yellow ones are for stews and slow cooking.
I haven't figured out what shallots are good for yet.
