KFC launched Beyond Chicken back in 2020 in 12 states as a pilot program. They came up with a new formulation in 2021 that is stringier, like real chicken breast, and are going to launch that.

So what? If anything, these shortages will be good for us. They help make our agricultural systems more robust. Reliance on protein from organisms at higher trophic levels will make the world more nutrition insecure in times of instability. Humanity needs to become open to the prospect of transitioning away from traditional livestock as source of nutrition in order to meet commitments to ecological sustainability and humane treatment of all sentient things. People can still enjoy foods they grew up with, like steak in the west. But maybe instead of a weekly thing, it can become a monthly thing, then a yearly thing, and perhaps more often once we are able to culture the target food tissue in a bioreactor rather than involving a whole living thing.
