I don't make it the traditional way (whole leaf) because I like chunks and don't want to cut it every time so I make it the same way I make sauerkraut: layering salt and cabbage. had to give up the buttered coffee and the macadamias, I was getting macadamias at $9.99 USD a lb and making my own macadamia butter, plus I had bags of un-butter-ified macadamias lying around and it was way too easy to snack and too high calorie. rigatoni bake. brown ground-italian-sausage(hot) and onions, with dry seasonings just at the end of browning
pour over jar of sauce, and a jarful of water, simmer 60-90mins
boil pasta in salted water, strain, mix with sauce
layer sauce and assorted cheeses (I use a cottage-cheese+parmesan mix instead of ricotta, plenty of mozzarella+muenster with extra muenster saved for the crust on top) and bake 45 mins. can cool and cut into slices, individual slices freeze-and-reheat REALLY well.

probably the best thing I make, with a few ideas plucked from Chef John's baked ziti and I think Babish had a soprano's episode that I got some idea from, not big on the guy but I remember it informing my recipe.
