This is starting to get really weird. Is the beef industry that fucked? I keep seeing pork at the butchers prepared as common beef cuts. I know beef is really expensive and pork is cheap, but do they really think people are desperate enough to get pork in cuts that don't enhance its taste or flavor just because it looks like a steak?

I actually bought a bunch of those. They had them marked to like $1.70 each and they were pretty good. A lot of beef and pork cuts are pretty similar though. Those are both from the tenderloin. The only difference is you can't cook pork to a lower doneness temp like beef.

For me it's the Chick-Fil-A fish sandwich made from 100% American Pork Fillets.

Lots of restaurants serve pork cooked medium or medium well. All the advice about overcooking the shit out of pork was because people were scared of trichinosis, but it's extremely rare in the US these days so it's pretty safe to undercook pork a little bit.

The wuflu fucked up beef supply chains so people have been looking at alternates without resorting to eating nothing but chicken. Same reason every fast food chain has been shilling chicken sandwiches, beef got too expensive so they needed an alternate.

It’s a slice of pork tenderloin. Pigs has a tenderloin same as cows.
I sincerely doubt it has anything to do with the beef industry.
If anything, it’s trying to capitalize on the millennial “I only cook for myself” market who can afford convenience ingredients because they’re only single, not broke and single. The same market that buys hello fresh and blue apron.

What?
Sell vacuum-sealed meats with stuff added to help retain color on the shelf and make it more tender/juicy when cooked?
Yes, sometimes. You can also buy things that aren’t. In fact, American grocery stores often have many different varieties of what you might consider the “same thing”.
You should try visiting one and get your mind blown like Comrade Yeltsin.

I think it's regional, at my local budget grocery store here in NW Cook County, IL (Butera Market, a Piggly Wiggly subsidiary) beef is about the same price as it was a year and a half ago, aside from high demand cuts like ribeye. Pork meanwhile is much more expensive, easily $1/lb higher for everything, which comes out to a 33% to 100% increase depending on the cut. Chicken is slightly higher but not by as much. The variety of pork cuts hasn't really changed there, either. Maybe your store is just diversifying its selection?

Truth, stop overcooking your pork people. But to be fair I wouldn't trust cooking a Kroger brand, pre-packaged pork filet to anything under 165.
