I agree except for the fact that he's so try-hard about his recipes. Everything needs to be from scratch, everything he cooks is gigantic in size too which I don't like.

Builds good flavors and can actually cook. Some of the recipes he's done mirror my own, but I make them for special occasions. It's impractical to cook like that every day when you work a real job 40hrs+ a week. With everything else I gotta fuckin do, I barely have time for a quick grill out, I'm not fuckin making my own buns and starting a reduction on the stove simultaneously.

Like his "but better" series for fast food. I don't want my texas toast to be some razor sharp hipster sourdough crostini with 10 huge flakes of maldon salt. Weissman uses weeb ingredients so he's not practical, and many of his recipes are things I'll never have access to, though he does do fermentation
Babish does okay food and is less annoying then Weissman but his content lacks variety
Ragusea does realistic food but that doesn't help me much, I know how to simplify things myself and I don't need a dozen tricks to dirty less dishes. he also does videos that arnt just recipes so I presume I'd be allowed to watch those videos regardless
