Hi sloppers and slopettes, Big Papa Sloppa here with my latest sloppa! It's 15 bean soup with ham hocks. It's congealing beautifully in the fridge.

I've never done that before but it sounds like it would work. the gelatin in them is what makes them great in bean soups.

The major difference though is that hocks are usually salted and smoked. They also have a fair bit of meat compared to it. If its just flavor that you're looking for then you can probably substitute pigs feet with a bit of bacon? I don't know.

I bought a bag of pic related for some reason. I don't remember why, especially since they're more expensive than normal bags of beans. I threw the seasoning packet out, I made it myself.

I just sort of improvised, but the recipe was:
>2 medium onions
>3 carrots
>2 jalapeños
>3 stalks celery
>1/2 a bell pepper I needed to use up
>that 20 oz bag of 15 beans
>3 ham hocks
>1 tsp thyme
>2 bay leaves
>black pepper

Instructions
Soak beans overnight
Dice your onions, carrots, celery, bell pepper, and jalapeño and then saute them
dump your beans, ham hocks, and sauted mix into a pot and cover with water
bring to boil for 10 minutes to kill the toxins in the kidney beans and then simmer (alternatively you can boil the beans then add the rest of the stuff)
add enough water to cover the ham hocks

If you have not cooked with ham hocks before, BE CAREFUL! They are salty and depending on how salty yours are you could end up with an overly salty soup. You can soak ham hocks overnight to help get some of the salt out or you can use one ham hock and see how it comes out.

Ham hocks are the best meat on the whole pig. I find that ham usually has a very dry or almost rubbery texture but the hock meat has a delicious, fatty texture that's almost like chicken dark meat.

Trying to cut some weight so I made this for the week since I had a lunch break to make it.
Add the following to a pot:
1lb ground turkey
1 bag of frozen veg
Half an onion
Half a zucchini
Brown or sweat ingredients with a little oil.
Add
Chicken stock
Some leftover homemade salsa
Add in some simple spices: salt,pep,onion&garlic powder, paprika.
Some good healthy sloppa, surprisingly hearty.
