I dont know if I just dont have the right pan for it, maybe I should get an iron pan.

First key is to let the meat come up closer to room temp. At least 15-20 min of the steak sitting on the counter before you start cooking. I use cast iron over medium-high heat and I let that heat for at least ten minutes to ensure the entire skillet is properly heated. Then I add some olive oil to the skillet and swish it around to coat the surface. Just before I put the steak in the pan I pay it fry with paper towel and I season it on all sides. If you season it earlier the salt will bring a lot of moisture to the surface and you’ll get a grey steak so it’s important to only season it just before it goes into the pan. I drop that sucker in the pan for two minutes then flip to the other side for another two minutes to complete the sear then I keep flipping every minute and checking the internal temp with an instant thermometer and pull it out of the pan about 5 degrees shy of where you want it to end up and let it rest on your cutting board for a few minutes to let the juices redistribute and the internal temp to rise another few degrees.

Cast iron in one for or another is a must. I’ve used my stainless steel plenty of times but nothing Sears a steak as well as cast iron.

Tonkotsu ramen with a shoyu/dashi tare mixture and a garlic aroma oil. Fresh noodles from a local Korean market were an amazing addition.

Topped with a soy marinated soft-boiled egg (which fell under the broth for the picture, sadly), sliced scallion, matchstick carrots, and sliced shiitake.

I wanted to make something with a piece of steak and a hatch pepper but I don't actually know how to cook southwest stuff so I just sliced the steak and pepper up and cooked it with garlic, onion, cumin, oregano, and then dumped some orange juice in the pan with a knorr stock pot and let it cook down a little. it was ok. I find with (atleast goodish) steak if you want to cook it sliced up, it's best to slice it as thin as possible, marinade it overnight, drain the marinade off, and then absolutely fucking BLAST it in a pan for like a minute or two tops. Pan so hot when oil hits it it starts smoking and when your meat goes in it catches on fire tossing on the edges of the pan (if gas)

then it stays tender. gentle stir-fry is just tough sloppa
