All the techniques and experiments are solid. Pretty much anything that involves a test with multiple people is a guaranteed good recipe or technique.

He just sometimes has a strong opinion about dumb minor things, like spending tons of time researching how to perfectly cook a burger in a specific, special way and then swearing that it should be topped with shitty American cheese. Follow his techniques but just adjust for your specific taste when it comes to food profiles you're familiar with.

Pretty much all the other complaints about him on here are that he isn't a white guy and he has opinions that don't align with Trump voters and voices a minor quibble every 20 videos.

Had he turned down from a "10" to like a "7", he would have actually heated the skillet and not the air around it. Proper pizza dough is something that takes good knowledge to make, and getting high quality dough even more. If you've ever had shitty pizza you'd know that. And most pizza recipes out there for home cooks are terrible.

The guy basically built the SeriousEats website as well.
You can get the same talk of technique over pure directions just reading one of the accompanying articles with any of the guy's recipes. Where he talks about the exact reasons for the things that he does, and suggests alternatives or substitutions. I tend to use them to avoid doing some of the more anal steps or techniques the guy uses for more practical techniques.
