Don't make it yourself.

Industrialized bread making is a process of scientifically creating the best bread that's better than any one homemade cook can make.

And that's the reason why even the most labored home cooks rarely ever make bread.

>make a bread dough
>bake only as many as you're going to need that day
>put the rest of the dough in fridge
>repeat steps 2&3 every day
>when out of dough start from the beginning

Infinite fresh bread.

If you do absolutely nothing else, measure your ingredients by weight instead of volume. Volume measurement for baking is the cause of most fuck-ups for beginners.

Baking soda is only really used for quick breads like muffins, what the fuck recipes for loaves of bread are you seeing with baking soda as an ingredient?

Don’t put in too much effort. If you fuck around too much you get a dense, hard loaf.

The oven companies? They've been afraid of supporting my kind of people since 1945

The only bread that I can't make better myself at home is baguette and similar breads that require steam ovens.

this

Also:

make your oven as hot as it can get. hotter than you think you should.

I think it's a good idea to make focaccia before trying to make loaves of bread. just for practice working with yeasted dough and understanding how it will cook/taste etc

"artisan bread in five minute a day" is a beginner friendly introduction to home bread baking and the master recipe is a very easy recipe that lets you play around as much as you like. I had the cookbook at one point but using the master recipe free online is just as good and you can look around to see what people have done with it.

Don't take it too seriously. It's not a big deal, it's just bread. You're not selling it, you're not a baker who needs to perfect a formula or you'll lose your livelihood. Relax, it's not a big deal.

I don't know. I usually buy a bread called "bread bread" at a local bakery and I like it. But I want to start making my own bread, so obviously my first action was to try to learn something on /ck/. I also like brioche a lot, but I think it's too complicated for me. Again, I'm a complete idiot when it comes to cooking. I live of grilled steak and bread. Sometimes baked potatoes and garlic.

When you first start making bread you have to need it so much more than seems necessary but it helps it rise so much better

>> No.16574249

The key for bread baking is patience, and understanding the dough. It will do what it want, but if you know what you are doing, you can steer its behavior in a certain direction.

Measure by weight, not volume.
Halfway through your initial bulk ferment, fold the dough over on itself a few times to redistribute moisture, yeast and heat.
When you preheat your oven, place a cast iron pan in the bottom of the oven. When you put your bread in, dump a half cup or so of ice in the pan to help make steam for a better crust.

I'm currently training to be an artisan bread baker so if you have questions I'll see what I can help with.
