In Spain before globalization also butter and pork fat was used, olive oil was only for the areas with olive trees.

Germany was also big on using pork (and geese) fat, but it fell out of fashion (as a cooking fat but also as a spread on bread). The concept of clarified butter still seems to be strange to still a lot of people (it's also very expensive) and regular butter burns to fast so people use sunflower or rapeseed oil for daily cooking. Butter is often added later just for taste. Wannabe chefs and housewifes, who watch to many cooking shows use olive oil for everything.

I'm from Spain and I enjoy my country's food the most for obvious reasons. That being said, I just went on a 12 day trip to finland and spent most of my days in a comfy cabin by the lake with my gf's family, and I think most nordics think too little about their gastronomy.

Her mother was super self conscious about giving me any food but I thought there was some pretty nice things i would have never tried otherwise. I unironically think rye bread is more interesting than most white bread, the summer potatoes were actually excellent and the freshwater fishes they marinated were excellent too. Also we don't get to have any berries in Spain and trying all those different kinds was very nice aswell.

In my experience, most food people has most of the time is not really anything special. We don't have expensive iberico ham 7 days a week in spain. It's more about cherishing the moments you get to enjoy some foods which might not even be particularly exquisite, and I think that's more like what really happens in the med countries.

Colossal drunks up there tho. Lots of fun.

We have bread, cakes and pastries. Then we do a lot with carbs like Knödel, Spätzle. We also have shelf stable veggies like pickles, Sauerkraut and Rotkohl. Lots of roasts and stews plus the sausages you already mentioned.
In addition to all of that, we have lots of seasonal dishes, like asparagus or anything with fruits and berries.

A lot of our cuisine however is regional and isn't well known outside of our borders. That makes it difficult for it to attain global fame.

I'll post a recipe as an example that the experienced cooks of /ck/ should be able to tackle.

Ok, so you take raw herring filets. However many you like. If you don't want to leave them whole cut them into pieces as a last resort.

Now take an apple and two onions and cut them into thin slices.

Chop a copious amount of dill.

Put all of it into a bowl, cover with yoghurt, a bit of cream. Use milk until the consistency is to your liking, but don't overdo it or it will be soup.

Cover the bowl and let it soak for two days. Then eat it cold on hot, peeled potatoes.
