For me it's about the bun being richly and evenly filled and not making the outmost layer disgustingly thick compared to the inner.
Oh and no glaze. We're already eating a suger bread bun with sugar filling, it's not a question of being "healthy" but the glaze simply sends it over the top and disguises the good taste of cardamom in the bun. Finally, it should be properly baked all around with a noticeably dark color in the very middle but still browned at the edges and on the underside.

Smaller rolls are better.
Butter. No, more than that.
It's not just cinnamon in the cinnamon roll. Nutmeg, a smidge of allspice, cardamom, stuff like that really deepens the flavour.
Getting the icing right.
Cook them with cream/half-n-half in the pan so they don't dry out as much.
Roll them nice 'n even, if one layer is too thick you fucked up.
DARK brown sugar, not the golden cane sugar shit, and add some molasses for extra browney-sugarey-ness.
