I ended up with a package of chicken breast that was tough so I did some investigating on the webs.
Turns out I purchased woody chicken.
Anyone else dealt with this?

Happening more and more with factory farmed chicken. Their Frankenstein genome finally found a way to not get eaten.

At the moment, poultry farmers/businesses are investing millions to research and stop it, because they absolutely refuse to just use less, smaller chickens than ever concede their profit margins.

This often happens when a chicken is or was in a stressed and unhealthy (caged) environment before they were butchered.
The better you raise and freerange a chicken, the healthier and tastier the meat will be when they're ready to be butchered.

I'm French and have also lived in Finland, Hungary and Germany and i've NEVER heard of "woody" chicken nor have i ever seen a chicken breast look anything other than 0
