I finally perfected the fucking cheeseburger. I finally just made myself a home-made cheeseburger that was absolutely fucking delicious, mouthwatering and has me wanting more.

>grass-fed 20% ground beef , sprinkle a bit of marjoram and basil, make patties by hand
>preheat seasoned cast-iron skillet on a high heat until smoking, use a bunch of BEEF DRIPPING, no other cooking oil, use fucking beef dripping i swear to fucking god its the best fucking cooking fat of all time FUCK OLIVE OIL FUCK ALL OTHER OILS JUST USE FUCKING BEEF DRIPPING
>throw your patties in there, let em get crispy on the outside
>slowly lower heat when u see crisp outside
>squash patties with spatula, not too hard or you'll make em too thin and wide for the cheese but squash em'
>swish the beef dripping around in the pan, make sure these burgers are absolutely caked in the shit. try to baste them with the dripping.
>use DAIRYLEA CHEESE SLICES, no other slices allowed, fuck kraft singles. dairylea cheese slices have no palm oil, no other additives besides sodium citrate and sodium metabisulphite or wahtever the fuck its called that they use in every american cheese slice ever, has a delicious creamy and soft cheddar taste that pairs beautifully with the burger
>now is the time to season your burger patties, use a sprinkle of MSG. fuck everyone saying MSG is bad, it makes a huge different, fucking sprinkle that shit on there just grab a pinch and sprinkle it on each patty. then add salt and pepper, emphasis on the pepper
>throw dairylea cheese slices on top of the burger patties, close a lid on top of the skillet and turn heat down to low
>wait for it to melt

>i'm keto so i didnt use any buns but if i did i would fry the open side of buns in the left over burger juices and beef dripping in the skillet for a minute and then serve

since we're talking about burgers, how does Harvey's get their patties to be like this instead of the meatball texture ground beef burgers most people end up making. And yes, Harvey's burgers actually come like this, it may be shit to some but I prefer this texture, it tastes better to me for some reason.

yeah I was just wondering how they actually turn that into a patty, I suppose they would probably section off small amounts and use a tool like pic related to make the patty. I've had many burgers from many different restaurants and price points but every time I've had a burger with this texture it just tasted better for some reason, maybe its in my head, but ill experiment some time and let you guys know.

You can get it 90% of the way there without any tools, basically you just take your ground beef, cut a patty sized amount of it, and form it into a patty-ish shape as gently as possible without any unneeded molding. It’s not the exact same (because they extrude their ground beef directly into a patty shape as it’s ground), but is extremely close
